Our Merchant series celebrates culinary traditions around the world and the trade systems that led to their creation. This rendition takes us down south to Louisiana where the unique Cajun style of cooking is influenced by French, Haitian, West African, and Spanish heritages and traditions. This sauce starts as a classic Louisiana-style hot sauce, to which we add a hefty dose of Cajun herbs and spices along with sweet onions and zesty fresh lemon.
